Easy Crockpot chili recipe that's perfect for busy days. With minimal prep and a few basic ingredients you can throw everything into your slow cooker and let it simmer to perfection.

1 1/2PoundsGround Chuck (you can also use ground beef if you prefer that)
1LargeWhite Onion
1 1/2CupsStock(veggie, chicken, or beef)
1Large CanTomatoes
1Small CanTomato Paste
1CanPinto Beans
1CanGreat Northern Beans
1CanCannellini Beans
1CanRed Kidney Beans

Instructions
In a skillet over medium heat, cook the ground chuck to the point that it's crumbling and there is only a little pink left. Ground chuck has a richer flavor so I prefer that over ground beef. Then add the chopped up white onion and ¼ teaspoon of salt. Saute the beef and onion together for about 3-5 minutes until the onions are slightly cooked down. Add the cooked beef and onion directly into the crockpot.
Add in the can of tomatoes, tomato paste, 5 cans of beans, and all the seasonings to the crockpot. Cook on low for 6-8 hours or on high for 3-4 hours. Stir occasionally.
Notes
Chili freezes well so I always make more and put it in ziplock bags for a different day.
